Cake mix oatmeal cookies.

AMAZING! Cake mix oatmeal cookies. They rise like a cake and they don’t taste like traditional oatmeal cookies. I didn’t add pecans, my Sis & nephew are allergic. I don’t particularly like pecans in cookies, so I wouldn’t have added them anyway. Using the cake mix made this recipe super quick to whip up. I don’t know why I never had these before.

Ingredients:
1 box white cake mix
2 cups quick-cooking oatmeal, uncooked
1 cup sugar
1 tablespoon vanilla extract
½ cup vegetable oil (I added a bit more to moisten the dough)
2 large eggs
½ package semisweet mini chocolate morsels
Directions:
Combine first 3 ingredients in large bowl and mix together with spoon.
Combine oil, eggs & vanilla extract, beat slightly and then add to dry ingredients, stir well.
Stir in pecans (if desired) and mix well.

Stir in chocolate morsels if you choose to add these and mix well.
Drop by teaspoonful on ungreased cookie sheet. Drop about 2-inches apart. Bake at 325°F for 12 minutes or until lightly browned.
Try them, they’re really melt in your mouth good!
