Taco Casserole.
This turned out much better than I anticipated! Recipe:
1 pound ground beef
taco seasoning packet
shredded cheddar cheese
frozen corn
tortilla chips
sour cream & taco sauce for serving
Prepare corn per package. Browned ground beef, season and simmer per packet per instructions. Crunch up tortilla chips and place in bottom of glass container. Top with a layer of seasoned meat, then add a layer of corn, layer of cheese, then another layer of crushed tortilla chips, the rest of the meat, rest of corn, and a generous layer of cheese to finish up.
Bake at 350 for about 20 minutes until cheese is melted. Serve topped with sour cream & taco sauce with additional tortilla chips. Quick and a lot less messy to eat than regular tacos! I love how warm and gooey everything is 🙂
