Zucchini fries with fresh marinara.
In my quest to eat more fruits and vegetables masked as food I like, I came across this recipe for baked zucchini fries. I LOVE real fries, so maybe these will be a suitable replacement. They were super simple, dip sliced zucchini in eggs, and toss in a breadcrumb, parmesan cheese mixture. Bake for 10 min on each side at 425 degrees.
The marinara was just as quick & easy, cook 2 cloves of garlic in olive oil for just a bit, then add a can of crushed tomatoes, a tsp of basil & oregano and simmer for 20 minutes or until thickened.
Fresh out the oven, the zucchini fries were so good! A little crunchy and very fresh and light. A great snack!
