turkey meatloaf with sautéed gnocchi. Had some ground turkey in the fridge and a taste for meatloaf. I make meatloaf whenever I want something to remind me of home, and just like my Ma, I make it different every time.
Ingredients
1 lb of ground turkey
½ lb of ground beef (I was nervous of only using turkey, so I added some beef in you can simply use 1/2 lb of turkey if you choose)
2 cups of bread crumbs (wheat bread that I placed in the food processor)
½ cup Italian bread crumbs
Creole seasoning
sea salt
pepper
onion powder
garlic powder
Dijon mustard (less than a table spoon)
¾ cup of ketchup
2 eggs
Mix all of the ingredients together, eggs last. I went a little heavy on the seasoning, turkey has a lot less natural flavor than beef. Place in a greased loaf pan and cook for 50 minutes at 400 degrees.
This turned out better than I expected. I was a little worried about the consistency, but using turkey made the dish much lighter! I paired it with gnocchi that I sautéed in butter, Italian seasoning and salt & pepper. A pretty easy, pleasing meal. Perfect comfort
