Meal Prep: Pork Carnitas Bowls

Used my slow cooker to do the work for me this week.  I typically do barbecue pulled pork, so this was a nice change of pace.  I used the juices to make the rice (well my Mom did, since she’s borrowing my rice maker, lol), then created the corn salad to go along with it.  I doubled the corn recipe and was able to make 9 bowls for 3 individuals.  Simple, easy and delicious!

Meal Prep: Pork Carnitas Bowls

Ingredients

  • 4 lb boneless pork shoulder (pork butt), skinless
  • onion powder
  • 2 1/2 tsp salt
  • 1 tsp black pepper
  • 4 cloves garlic, minced
  • juice of 2 limes
  • 2 oranges, juice only
  • 1 tbsp dried oregano
  • 2 tsp ground cumin
  • 1 tbsp olive oil
  • corn salad: 1 cup sweet corn, 1 cup black beans, rinsed and dried, 1/4 cup fresh chopped cilantro, 1 Tbs fresh lime juice, Salt and pepper, to taste

Instructions

  1. Rinse and dry the pork shoulder, rub in salt and pepper.
  2. Combine the rub ingredients, (oregano, cumin) then rub all over the pork.
  3. Place the pork in a slow cooker (fat cap up), top with the onion powder, minced garlic, pour juices over
  4. Cook on low for 8 to 10 hours or on high for 6 hours
  5. The meat should be tender and falling off the bone. Remove from the slow cooker and let cool slightly. Then shred the pork using two forks.
  6. Heat 1 tbsp of oil in a large non stick pan over high heat. Place shredded pork into the pan, drizzle over some juices. Wait until the juices evaporate and the bottom side is golden brown and crusty. Turn and just briefly sear the other side - you don't want to make it brown all over because then it's too crispy, need tender juicy bits.
  7. Repeat in batches (takes me 4 batches) - don't crowd the pan.
  8. Prepare corn salad by draining corn, and mixing 1 cup corn with 1 cup rinsed and drained black beans, red onion, cilantro, and lime juice, salt and pepper in a large mixing bowl, then set aside.
  9. Disperse into separate containers and garnish with lime slice, tomatoes and avocado
