Grilling w/ Bri: grilled BBQ chicken legs & grilled cheesy foil potatoes
The weather was amazing Sunday so for the first time in a while, I didn’t mind standing in front of a fire pit. I dumped a bunch of insta light charcoal in the grill and boom, fire. Side note: I’d have to say this insta-light brand from Krogers was some of the best burning charcoal I’ve ever bought.
I love grilling sides in foil and I love using whatever I have in my fridge, so I took a couple of jumbo potatoes and sliced them really thin. Placed them in foil and seasoned with garlic & onion powder, chili powder and pepper, then tossed with cheddar cheese. I decided to grill 30 minutes before dinner time, so I didn’t have time to marinate the chicken like I normally would. I just seasoned them really well with Cajun spice & pepper. Both went onto the ready coals and then the magic began. About 10 minutes into the grilling, I added about 2 tablespoons of butter to the potatoes. Once the chicken was almost ready, I covered them in sweet baby ray’s BBQ sauce (don’t get me started on my Boyfriend’s love of this sauce) then let them caramelize a bit. I paired this with buttered brussels sprouts (I try to eat something green most meals, so I steamed a bag in the microwave) for a really great meal! Amazing and super simple.
