I’ve been in search of a quick and easy warm salad recipe. This turned out delicious and far exceeded my expectations!
Ingredients
- Olive oil
- balsamic vinegar
- Italian seasoning
- 1/2 lb shrimp
- 1 teaspoon old bay seasoning
- 1 teaspoon creole seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon minced garlic
- 2 cups of romaine lettuce, sliced into strips
- 3 cups of cooked quinoa
- 1 avocado, diced
- Cilantro chopped, optional
Directions
- For dressing, combine 1 cup of olive oil with 1/2 cup of balsamic vinegar and season with 1 table spoon of Italian seasoning. Stir to combine or shake. Set aside.
- For shrimp, heat pan over medium heat. Drizzle with olive oil. Add garlic and shrimp and season liberally with seasonings. Cook for 2 minutes on each side and remove from heat.
- Assemble salad and drizzle with dressing. Enjoy!
