The Burrito Bowl recipes as requested.
I started with ground beef cooked with a simple taco seasoning packet.
Boiled corn on cob (4) for 10 min, then shucked corn once the cobs had cooled. Added salt, pepper & a handful of cilantro & the juice of one lime.
Cooked 2 cups of rice till tender on stove, then added the juice of one lime (to taste, this can get tricky, too much lime juice in the rice won’t taste so great) and added a handful of chopped cilantro.
Took the black beans right out of the can and warmed in the microwave (can make on the stove, but we’re going for quick, right?!)
Most of this can be done at the same time, which is awesome: Rice cooks while corn boils while browning the beef. Each dish is quick & easy, so you don’t spend all night making dinner. Next I top with salsa, sour cream & cheddar cheese (or mozzarella if you want to be like Chipotle) and serve with my favorite chips. The burrito bowl perfected & you won’t have to argue with anyone about what Extra cheese really means! Enjoy!
