Perfect oven french fries recipe
potatoes – I used 3 small for two people
1 Tbsp cornstarch
1 teaspoon salt
Preheat oven to 450 and put rack in lowest position in oven
Cut potatoes into thin strips. Place in a bowl, covered tight with plastic wrap and microwave for 4-5 minutes. Shake up halfway to redistribute.
Blot potatoes dry with paper towels.
Coat baking sheet with oil. Place in oven on low rack and heat oil for 6 minutes. Remove from oven (it will be smoking).
Drizzle 2 Tablespoons of oil, cornstarch and salt over potatoes and toss to coat.
Arrange potatoes in a single layer on baking sheet and bake until crispy, about 30 minutes, flipping potatoes halfway through time.
Carefully transfer potatoes to paper towels and blot excess oil.
