One Pot Chicken Tortellini Recipe
In my quest to get back to meal prepping, I wanted to find an easy delicious recipe that was really tasty. This had all the makings and it far exceeded my expectations!!! Its restaurant quality with minimal effort. Give it a try and let me know how it goes!
One Pot Chicken Tortellini Recipe
Ingredients
- 1 pound boneless skinless chicken thighs (I slow cooked them in the crockpot for 6 hours)
- Seasonings for chicken: ms Dash, onion powder, garlic, onion salt, pepper
- 20 ounces of refrigerated tortellini
- 1 tablespoon olive oil
- 2 tablespoons butter
- 2 tablespoons flour
- 2½ cups chicken broth
- 1½ cups heavy cream
- ¼ cup grated parmesan cheese
- 1 package fresh spinach
- 1 cup cherry tomatoes, halved
- 2 tablespoons chopped basil
Instructions
- I seasoned and slow cooked the chicken in the crockpot for 6 hours, I just like it cooked this way. You can skip this step if you like.
- Heat the olive oil in a large pan over medium-high heat. Add the chicken to the pan and season (if you haven't already) Cook, stirring occasionally, until chicken is browned.
- Remove the chicken from the pan; set aside
- Add the butter to the pan and melt; whisk in the flour and cook for a minute.
- Stir in the chicken broth and cook 2 minutes or until slightly thickened.
- Add the tortellini to the pan and bring to a boil; cook for 4 minutes, stirring occasionally to make sure tortellini is coated with liquid.
- Stir in the cream and parmesan and cook for 1 more minute.
- Add the chicken back to the pan along with the spinach. Cook for 2-3 minutes, or until spinach is wilted.
- Fold in the tomatoes. Sprinkle with basil and enjoy!
