One Pot Chicken Tortellini Recipe
In my quest to get back to meal prepping, I wanted to find an easy delicious recipe that was really tasty.  This had all the makings and it far exceeded my expectations!!! Its restaurant quality with minimal effort.  Give it a try and let me know how it goes!
One Pot Chicken Tortellini Recipe

Ingredients

  • 1 pound boneless skinless chicken thighs (I slow cooked them in the crockpot for 6 hours)
  • Seasonings for chicken: ms Dash, onion powder, garlic, onion salt, pepper
  • 20 ounces of refrigerated tortellini
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2½ cups chicken broth
  • 1½ cups heavy cream
  • ¼ cup grated parmesan cheese
  • 1 package fresh spinach
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons chopped basil

Instructions

  1. I seasoned and slow cooked the chicken in the crockpot for 6 hours, I just like it cooked this way. You can skip this step if you like.
  2. Heat the olive oil in a large pan over medium-high heat. Add the chicken to the pan and season (if you haven't already) Cook, stirring occasionally, until chicken is browned.
  3. Remove the chicken from the pan; set aside
  4. Add the butter to the pan and melt; whisk in the flour and cook for a minute.
  5. Stir in the chicken broth and cook 2 minutes or until slightly thickened.
  6. Add the tortellini to the pan and bring to a boil; cook for 4 minutes, stirring occasionally to make sure tortellini is coated with liquid.
  7. Stir in the cream and parmesan and cook for 1 more minute.
  8. Add the chicken back to the pan along with the spinach. Cook for 2-3 minutes, or until spinach is wilted.
  9. Fold in the tomatoes. Sprinkle with basil and enjoy!
