Valentine’s day dessert: mini strawberry cheesecake!

My boyfriend has an affinity for no bake cheesecakes, so for Vday I wanted to make a dessert he loves.  I’m glad I did!   It was so quick and easy and I love how you get so much more crust per bite this way.  It Simple, great, single servings!
